Easy Pasta Fagioli Soup Recipe

Pasta Fagioli (AKA pasta and beans) is a delicious and hearty Italian soup that's so delicious! Serve with crusty bread and wine for a comforting meal everyone will love! This homemade version is SO much better than the Olive Garden!

What you need

tsp crushed red pepper

yellow onion

lb pork sausage

carrot

garlic

tsp thyme

tsp italian seasoning

chicken broth

tomato & basil sauce

white beans
cup short pasta

baby spinach

salt

black peppercorn

parmesan cheese
Instructions
Add oil to a large soup pot and bring to a simmer over medium heat. Add in the crushed red pepper and onion and cook until the onion is very soft, about 10 minutes. Add in the sausage and, using a wooden spoon, break it into small pieces. Cook until sausage is brown and no pink color remains. Add in the carrots and cook until they begin to soften, about 5 to 6 minutes. Add in the garlic, thyme, and Italian seasoning, cook for 1 minute, or until fragrant. Pour in chicken broth and crushed tomatoes and stir to combine. Increase heat to medium-high and bring soup to a boil. Reduce to a simmer and cook for at least 30 minutes. This is where the soup develops its flavor! Stir in the beans and continue cooking the soup for another 10 minutes. In the meantime, bring a small pot to a rolling boil. Add a dash of salt, then add the pasta into the boiling water and cook for 7 to 8 minutes, or until al dente. Drain the pasta and quickly rinse it under cold water. Toss the pasta into soup the pot, then stir in the spinach. Taste and season with salt and pepper. Cook for another 5 minutes, or until the spinach has softened. Remove from heat and divide among serving bowls. Top with cheese and serve at once!View original recipe
